The two numbers that govern the wheel
Two figures decide everything: how often a bet wins, and what it pays when it does. On a European wheel with 37 pockets, an even-money bet covers 18 numbers, so it wins 18 in 37 — 48.6% of the time. Why covering more numbers is not better odds
A common instinct is to spread chips across many numbers to "improve your odds". It feels safer, and you do win more often — but the maths does not move an inch. Cover 24 numbers on a European wheel and you win two spins in three, yet the payout shrinks to match, so the expected loss per dollar is still 2.70%. Cover a single number and you win once in 37, but the 35:1 payout carries the identical edge. The American wheel adds a second green pocket, the double zero, and that one extra slot pushes the edge from 2.70% up to 5.26% — nearly double, for a game that plays the same in every other respect. French roulette runs on the same 37-pocket wheel as European but softens even-money bets with la partage, which hands back half your stake when the ball lands on zero. House edge and volatility are different questions
The house edge tells you the long-run cost. It does not tell you what any single session will feel like. That second question is about volatility — how widely results scatter around the average before the average has time to assert itself. Two bets can share the exact same 2.70% edge and still behave nothing alike. A red/black bet wins close to half the time and grinds slowly. A straight-up number wins once in 37 spins and swings hard between long droughts and sudden 35-unit hits.
Volatility is the reason one player can walk away ahead on a high-edge American wheel while another loses steadily on a low-edge French one. Over a short run, variance dominates and the edge is almost invisible in the results.
